Tonic Rosé 2019


We've certainly been evolving our Rose style over these last few years and the 2019 is no different. Always looking for more savoury interest and a less obvious fruit forward expression of rose is our focus. This year, as with the Grenache, we have sourced some fruit for McLaren Vale for the blend (and yes of course it was Grenache from the Blewitt Springs region). It's a crowded Rose market out there these days but we'll continue to strive for a complex savoury wine that you can enjoy with fine food and even finer friends. 

The varieties haven't changed but once again the blend proportions have: 70% Grenache from both McLaren Vale and The Clare Valley have been blended with 30% Mataro from Norm's Block in Armagh, Clare. The grapes were crushed and immediately basket pressed, giving the juice sufficient time in contact with the red grape skins for it to pick up that that burnished salmon colour.

The juice went into old French barriques, where it fermented wild and in its own time. Benign neglect then took over until it was racked off lees and bottled with a small amount SO2, but without fining or filtration, in May 2020. This edition spent a few months longer in barrel than previous years. It is bone dry yet supple and just so damn drinkable. A little more depth of fruit but with a trademark savoury element and textural interest. Flavours of pomegranate and dried cherry and refreshing acidity, with heaps of texture and flavour.

Clare Valley rose from Tonic Wines. Said it before and will say it again: have to love the packaging of these wines.

Love the flavour profile here. Jellied orange, bitter herbs, dry spice, fennel and raspberry. Touches of Campari, touches of pomegranate; what I’m really saying is that it’s different from the norm and yet it’s juicy and accessible. Like it a lot
